2 cups flour (I used King Arthur’s White Whole Wheat Flour. You could use a mixture of regular whole wheat and unbleached flour and keep the recipe G.I. friendly)
½ teaspoon baking soda
½ teaspoon salt
1 cup Splenda®
¼ cup margarine, softened
3 ripe bananas, mashed
1/3 cup non-fat plain or vanilla yogurt
1 teaspoon vanilla
2 tsp of cinnamon or a cinnamon spice blend such as Penzey’s cake spice
Preheat oven to 350®. Spray loaf pan with cooking spray.
Combine flour, soda, and salt.
Cream Splenda® and margarine with a mixer until well blended.
Add eggs, one at a time, mixing after each addition. Add banana, yogurt, and vanilla, mixing well. Add flour mixture, beating at low speed just until moist.
Spoon batter into loaf pan. Bake about 75 minutes or until toothpick inserted in middle comes out clean.
